  • 500 grams Beef sirloin or ribeye, cut into thin strips
  • 1 large Green bell pepper, diced
  • 1 large Red bell pepper, diced
  • 1 medium White onion, diced
  • 100 grams Bacon, sliced into small pieces
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Mexican oregano (optional)
  • 200 grams Shredded mozzarella or Oaxaca cheese
  • 8 pieces Corn or flour tortillas
  • 2 pieces Lime wedges, for serving
  • 2 tablespoons Fresh cilantro, chopped (for garnish)

Directions

Step 1

Heat a large skillet or frying pan over medium heat and add the sliced bacon. Cook until crispy, then remove with a slotted spoon and set aside, leaving the rendered bacon fat in the pan.

Step 2

In the same pan, add the olive oil and heat it over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.

Step 3

Increase the heat slightly and add the beef strips to the pan. Season with salt, black pepper, and Mexican oregano (if using). Cook the beef until browned and fully cooked, about 6-8 minutes. Remove the beef from the pan and set aside.
