  • 1 lb ground beef
  • 0.5 lb ground pork
  • 0.75 cup breadcrumbs

  • 1 large egg
  • 1 small onion
  • 3 garlic cloves
  • 1 jalapeño pepper
  • 0.25 cup cilantro
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 14.5-oz can fire-roasted diced tomatoes
  • 2 tbsp tomato paste
  • 0.5 cup beef broth
  • 1 tbsp chipotle in adobo sauce
  • 1 lime

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a small bowl, soak the breadcrumbs in milk for a few minutes to soften.

Finely dice the onion, mince the garlic, and chop the jalapeño (remove seeds for less heat).

In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumbs, egg, diced onion, minced garlic, jalapeño, chopped cilantro, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Mix until combined but do not overmix.
