Ingredients

  • 4 cups shredded hash browns (store-bought or freshly shredded potatoes)
  • 1 pound ground beef or ground turkey
  • 2 tablespoons taco seasoning
  • 0.25 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 0.33 cup chopped green onions
  • 0.5 cup sour cream
  • 0.25 cup sliced jalapeños (optional)
  • 3 tablespoons olive oil or vegetable oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.

Step 2

Spread the shredded hash browns evenly across the skillet. Sprinkle with salt and black pepper.

Step 3

Cook the hash browns for 3-4 minutes on each side, or until golden and crispy. Remove from the skillet and set aside.

Step 4

In the same skillet, add another tablespoon of oil and brown the ground beef (or turkey) over medium heat, breaking it apart with a wooden spoon.

Step 5

Once the meat is cooked through, drain any excess grease, then stir in the taco seasoning and water. Cook for an additional 2-3 minutes, stirring frequently. Set aside.

Step 6

In a clean skillet, heat the remaining tablespoon of oil over medium heat. Divide the cooked hash browns into four equal portions and flatten each into a round patty. Crisp up for 1-2 minutes on each side if needed.

Step 7

Top each hash brown patty with a portion of the seasoned taco meat, followed by shredded cheddar cheese.

Step 8

Cover the skillet with a lid and let the cheese melt over low heat for 2-3 minutes.

Step 9

Carefully transfer the hash browns to serving plates and garnish with diced tomatoes, chopped green onions, a dollop of sour cream, and sliced jalapeños if desired.

Step 10

Serve immediately and enjoy your Mexi Taco Hash Browns!
