Ingredients

  • 500 grams Ground beef
  • 150 grams Chorizo sausage
  • 60 grams Breadcrumbs
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 2 tablespoons Cilantro, chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 400 grams Crushed tomatoes
  • 1 pepper Chipotle peppers in adobo sauce, chopped
  • 120 milliliters Chicken or beef stock
  • 2 tablespoons Lime juice

Directions

Step 1

Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it.

Step 2

In a large mixing bowl, combine the ground beef, chorizo, breadcrumbs, egg, minced garlic, cilantro, cumin, chili powder, salt, and black pepper. Mix until well combined but do not overmix.

Step 3

Shape the mixture into meatballs, about 1.5 inches in diameter. You should end up with approximately 16-18 meatballs.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the meatballs in batches until browned on all sides, about 2-3 minutes per side. Transfer to the prepared baking sheet.
