  • 3 pounds Beef chuck roast
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 4 cloves Garlic, minced
  • 4 medium Carrots, peeled and cut into chunks
  • 2 stalks Celery, cut into chunks
  • 4 medium Russet potatoes, peeled and quartered
  • 1.5 cups Merlot wine
  • 1 cup Beef broth
  • 2 tablespoons Tomato paste
  • 1.5 tablespoons Worcestershire sauce
  • 2 sprigs Rosemary, fresh
  • 3 sprigs Thyme, fresh
  • 2 Bay leaves

Directions

Step 1

Season the beef chuck roast on both sides with salt and black pepper.

Heat the olive oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes on each side or until browned. Remove the roast and set it aside.
