Ingredients

  • 4 medium, peeled and diced beets
  • 2 medium, peeled and diced potatoes
  • 2 medium, peeled and sliced carrots
  • 2 sliced celery stalks
  • 1 medium, diced onion
  • 3 minced garlic cloves
  • 2 cups, shredded cabbage
  • 8 cups chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons (white or apple cider) vinegar
  • 2 tablespoons, fresh chopped dill
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon black pepper
  • 0.25 cup (optional, for serving) sour cream
  • 1 loaf (optional, for serving) crusty bread

Directions

Step 1

1. In a large pot, heat a drizzle of oil over medium heat. Add the diced onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.

Step 2

2. Add the diced beets, potatoes, carrots, and celery to the pot. Stir and cook for 5 minutes to lightly sauté the vegetables.

Step 3

3. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and cook uncovered for 25-30 minutes, or until the vegetables are tender.

Step 4

4. Stir in the shredded cabbage, tomato paste, vinegar, salt, and black pepper. Continue to cook for another 15-20 minutes until the cabbage is tender.

Step 5

5. Remove the pot from heat and stir in the fresh dill.

Step 6

6. Taste and adjust seasonings, adding more salt, vinegar, or pepper if needed.

Step 7

7. Serve the borscht hot with a dollop of sour cream on top and a side of crusty bread, if desired.
