Ingredients

  • 200 g rice vermicelli
  • 150 g shrimp, peeled and deveined
  • 2 eggs
  • 1 medium carrot, julienned
  • 100 g green cabbage, shredded
  • 3 stalks spring onions, chopped
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 0.25 tsp ground white pepper
  • 0.5 tsp salt
  • 1 cup water

Directions

Step 1

Soak the rice vermicelli in warm water for 10 minutes until they are soft. Drain and set aside.

Step 2

Beat the eggs in a small bowl and add a pinch of salt.

Step 3

Heat one tablespoon of vegetable oil in a large wok or frying pan over medium heat. Pour in the beaten eggs to make an omelet. Once cooked, remove from the wok and cut into thin strips. Set aside.

Add another tablespoon of vegetable oil to the same wok. Sauté the minced garlic until fragrant, about 30 seconds.

Add the shrimp to the wok and stir-fry until pink and cooked through, approximately 3 minutes. Remove and set aside.
