Ingredients

  • 1 pound Ground turkey
  • 0.5 cup Panko breadcrumbs
  • 0.5 cup Red onion, finely diced
  • 0.25 cup Sun-dried tomatoes, chopped
  • 0.5 cup Crumbled feta cheese
  • 0.25 cup Fresh parsley, finely chopped
  • 1 tablespoon Fresh oregano, chopped
  • 1 Egg
  • 2 cloves Garlic, minced
  • 1 teaspoon Lemon zest
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Tomato paste
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a large mixing bowl, combine the ground turkey, panko breadcrumbs, red onion, sun-dried tomatoes, feta cheese, parsley, oregano, egg, minced garlic, lemon zest, olive oil, salt, and pepper. Use your hands or a wooden spoon to gently mix until all ingredients are evenly incorporated. Be careful not to overmix to avoid a dense texture.

Step 3

Transfer the mixture to the prepared baking sheet or loaf pan. Shape into a loaf approximately 8 inches long and 4 inches wide if placing on a baking sheet.

Step 4

In a small bowl, whisk together the tomato paste and water to create a glaze. Brush the glaze evenly over the top of the meatloaf.

Step 5

Place the meatloaf in the oven and bake for 40-45 minutes, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.

Step 6

Once cooked, remove the meatloaf from the oven and let it rest for 5-10 minutes to set.

Step 7

Slice the meatloaf and serve warm. Pair it with a side of roasted vegetables, a crisp salad, or your favorite grain for a complete Mediterranean-inspired meal.
