Ingredients

  • 2 pieces ribeye steaks (1-inch thick)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup cherry tomatoes, halved
  • 0.5 cup kalamata olives, pitted and sliced
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cup feta cheese, crumbled (optional)

Directions

Step 1

Remove the steaks from the refrigerator and pat them dry with paper towels. Let them sit at room temperature for about 15 minutes while preparing the marinade.

Step 2

In a small bowl, whisk together 1 tablespoon of olive oil, lemon juice, garlic, oregano, cumin, salt, and black pepper.

Step 3

Generously rub the marinade on both sides of the steaks until evenly coated. Set aside for 10-15 minutes to allow flavors to infuse.

Step 4

Meanwhile, prepare the Mediterranean topping by combining the cherry tomatoes, kalamata olives, remaining 1 tablespoon of olive oil, and parsley in a separate bowl. Mix well and set aside.

Step 5

Preheat a grill or grill pan over medium-high heat. Once hot, lightly oil the grates to prevent sticking.

Step 6

Place the steaks on the grill and cook for 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness. Use a meat thermometer to ensure the internal temperature reads 135°F (57°C) for medium-rare.

Step 7

Remove the steaks from the grill and let them rest on a plate, loosely covered with aluminum foil, for 5 minutes.

Step 8

Serve the steaks warm, topped with the prepared Mediterranean mixture. Sprinkle with crumbled feta cheese, if desired.
