Ingredients

  • 400 grams fresh spinach
  • 120 grams feta cheese, crumbled
  • 120 grams breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 2 pieces large eggs
  • 2 tablespoons parsley, finely chopped
  • 2 tablespoons dill, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 milliliters olive oil (for frying)

Directions

Step 1

Wash the fresh spinach thoroughly and remove any tough stems.

Step 2

Blanch the spinach in boiling water for 1 minute, then drain and rinse immediately with cold water to stop cooking.

Step 3

Squeeze out excess water from the spinach and chop it finely.

Step 4

In a large mixing bowl, combine the chopped spinach, crumbled feta cheese, breadcrumbs, finely chopped onion, minced garlic, eggs, parsley, dill, ground cumin, salt, and black pepper.

Step 5

Mix everything thoroughly until well combined. If the mixture feels too wet, add a little more breadcrumbs until it holds together.

Step 6

Form the mixture into small patties, about 2 inches (5 cm) in diameter.

Step 7

Heat olive oil in a large skillet over medium heat.

Step 8

Place the patties in the skillet, making sure not to overcrowd, and fry for about 3-4 minutes on each side or until golden brown and crispy.

Step 9

Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil.

Step 10

Serve warm with a dollop of Greek yogurt or tzatziki as a dipping sauce.
