Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 2 large Eggs
  • 1 cup Milk
  • 0.25 cup Olive oil
  • 1 cup Crumbled feta cheese
  • 0.5 cup Chopped sundried tomatoes (packed in oil, drained)
  • 0.33 cup Chopped pitted Kalamata olives
  • 2 tablespoons Chopped fresh parsley
  • 2 tablespoons Grated Parmesan cheese (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the tins with olive oil.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.

Step 3

In a separate bowl, beat the eggs. Stir in the milk and olive oil until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and gently fold together until no dry streaks of flour remain. Be careful not to overmix.

Step 5

Add the crumbled feta cheese, chopped sundried tomatoes, Kalamata olives, and parsley to the batter. Fold gently to evenly distribute the ingredients.

Step 6

Scoop the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 7

Optional: Sprinkle the tops of the muffins with grated Parmesan cheese for extra flavor.

Step 8

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. These muffins pair well with a light salad, soup, or can be enjoyed on their own!
