Ingredients

  • 4 pieces chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1.5 cups cherry tomatoes
  • 0.5 cup kalamata olives
  • 1 small, thinly sliced red onion
  • 0.5 cup fresh basil leaves
  • 1 cup, shredded mozzarella cheese
  • 1 tablespoon balsamic vinegar

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Season the chicken breasts with salt, black pepper, garlic powder, and smoked paprika. Rub the spices evenly over both sides of each piece of chicken.

Step 3

Heat 1 tablespoon of olive oil in a large, ovenproof skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown. Remove chicken from the skillet and set aside.

Step 4

Add the remaining 1 tablespoon of olive oil to the skillet. Lower the heat to medium and sauté the red onion for 2 minutes until softened.

Step 5

Add the cherry tomatoes and cook for another 5 minutes, stirring occasionally, until they start to blister.

Step 6

Stir in the kalamata olives and balsamic vinegar. Cook for an additional 1-2 minutes, allowing the flavors to combine.

Step 7

Return the chicken breasts to the skillet, nestling them into the vegetable mixture.

Step 8

Top each chicken breast with an even portion of shredded mozzarella cheese.

Step 9

Transfer the skillet to the preheated oven and bake for 15 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).

Step 10

Remove skillet from the oven and garnish with fresh basil leaves. Serve warm and enjoy!
