Ingredients

  • 1 large cucumber
  • 250 grams cherry tomatoes
  • 0.5 medium red onion
  • 75 grams Kalamata olives
  • 150 grams feta cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash the cucumber and cherry tomatoes thoroughly under cold running water. Pat them dry with a clean kitchen towel.

Peel the cucumber, cut it in half lengthwise, and use a spoon to scoop out seeds (if desired). Slice the cucumber halves into thin semicircles.

Cut the cherry tomatoes in half and add them to a large mixing bowl.
