Ingredients

  • 250 grams fresh radishes
  • 240 milliliters white wine vinegar
  • 120 milliliters water
  • 1 tablespoon honey
  • 1.5 teaspoons sea salt
  • 1 teaspoon whole black peppercorns
  • 1 leaf dried bay leaf
  • 2 cloves fresh garlic cloves
  • 0.5 teaspoon fennel seeds
  • 4 sprigs fresh dill

Directions

Step 1

Wash and trim the radishes, cutting them into thin, even slices using a sharp knife or mandoline slicer.

Peel the garlic cloves and slightly crush them with the side of a knife.

Step 3

In a small saucepan, combine the white wine vinegar, water, honey, and sea salt. Bring to a gentle simmer over medium heat, stirring until the honey and salt are dissolved. Remove from heat and set aside to cool slightly.
