Ingredients

  • 2 pounds ground beef
  • 0.5 cup almond flour
  • 2 units large eggs
  • 0.5 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 0.25 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons tomato paste

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x5-inch loaf pan with olive oil.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, combine the ground beef, almond flour, eggs, and crumbled feta cheese.

Step 4

Add the sautéed onion and garlic to the meat mixture along with the chopped parsley, dried oregano, sea salt, and black pepper. Mix thoroughly until all ingredients are evenly distributed.

Step 5

Transfer the mixture into the prepared loaf pan, pressing down gently to distribute it evenly in the pan.

Step 6

In a small bowl, mix the remaining tablespoon of olive oil with the tomato paste until well combined. Spread this mixture over the top of the meatloaf for added moisture and flavor.

Step 7

Bake in the preheated oven for about 60 minutes, or until the meatloaf is cooked through and the outside has developed a nice crust.

Step 8

Let the meatloaf cool in the pan for about 10 minutes before slicing and serving.

Step 9

Garnish with additional chopped parsley if desired, and serve with a side salad or roasted vegetables with a Mediterranean twist.
