  • 2 large Eggs
  • 0.5 cup Whole milk
  • 3 tablespoons Extra virgin olive oil
  • 0.5 cup Greek yogurt (optional, for serving)
  • 4 pieces Lemon wedges (optional, for serving)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper. Whisk together until well combined.

Add the corn kernels, crumbled feta cheese, chopped parsley, and mint to the flour mixture and toss until the corn and herbs are evenly coated with the flour mixture.
