Ingredients

  • 1 pound Boneless chicken breast

  • 1 medium, diced Red bell pepper
  • 1.5 cups Basmati rice
  • 2.5 cups Low-sodium chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 whole Cinnamon stick
  • 1 whole Bay leaf
  • 0.25 cup, chopped Fresh parsley
  • 1 juiced Lemon

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Cut the chicken breast into 1-inch cubes and season with a pinch of salt and pepper.

Add the chicken to the pot and sauté until browned on all sides, about 5 minutes. Remove and set aside.
