Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons extra virgin olive oil

  • 2 pieces garlic cloves, minced

  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 0.5 cup kalamata olives, pitted and sliced
  • 0.25 cup fresh basil leaves, chopped
  • 2 cups baby spinach leaves
  • 0.5 cup feta cheese, crumbled

Directions

Step 1

Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness, about 1/2 inch thick.

Step 2

In a small bowl, whisk together 2 tablespoons of olive oil, lemon juice, garlic, oregano, salt, and black pepper.

Marinate the chicken breasts in the mixture for at least 15 minutes, preferably in the refrigerator.
