Ingredients

  • 3 medium beets
  • 2 medium onions
  • 6 large eggs
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons fresh parsley, chopped

  • 2 garlic cloves, minced
  • 0.5 cup feta cheese, crumbled (optional)

Directions

Step 1

Peel the beets and onions, and slice them thinly using a mandolin or sharp knife.

In a large, nonstick skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté for about 5 minutes until they begin to soften.

Add the sliced beets to the skillet and continue to cook, stirring occasionally, for another 10-15 minutes until the beets are tender.

Meanwhile, in a large bowl, beat the eggs with salt, pepper, and minced garlic. Stir in the fresh parsley.
