Ingredients

  • 8 sheets whole wheat phyllo dough sheets
  • 200 grams almonds
  • 80 ml honey
  • 60 ml extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon zest
  • 5 grams fresh mint leaves
  • 0.25 teaspoon sea salt
  • 50 ml water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a food processor, pulse the almonds until they are coarsely chopped. You want a mix of some fine and some larger pieces for texture.

Step 3

In a small saucepan, combine honey, water, and 1 tablespoon of olive oil. Heat over low heat, stirring until the honey is fully dissolved. Remove from heat and stir in cinnamon, lemon zest, chopped mint leaves, and salt. Set aside to cool slightly.

Step 4

Lay a sheet of whole wheat phyllo dough on a clean surface. Lightly brush it with the remaining olive oil. Place another sheet on top and repeat until all 8 sheets are stacked and brushed with oil.
