Ingredients

  • 2 pounds beef stew meat
  • 1 large yellow onion
  • 4 cloves garlic cloves
  • 3 medium carrots
  • 4 medium potatoes
  • 1 14-ounce can diced tomatoes
  • 4 cups beef broth
  • 0.5 cup kalamata olives
  • 2 tablespoons tomato paste
  • 2 tablespoons extra virgin olive oil
  • 0.5 cup red wine
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground cinnamon
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Dice the onion and mince the garlic cloves. Peel and chop the carrots and potatoes into bite-sized pieces.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the beef stew meat until browned on all sides. Transfer the seared beef to the crock pot.
