  • 0.25 cup Milk
  • 1 large Egg
  • 0.5 cup White onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 0.25 cup Ketchup

  • 0.5 teaspoon Black pepper
  • 1 tablespoon Brown sugar
  • 0.25 cup Glaze: Ketchup
  • 2 tablespoons Glaze: Brown sugar
  • 1 teaspoon Glaze: Dijon mustard

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or line it with paper liners.

Step 2

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, ketchup, Dijon mustard, salt, and black pepper. Mix gently until just combined; avoid overworking the meat mixture.

Step 3

Evenly divide the meat mixture among the muffin cups, packing them lightly. Each cup should be about three-quarters full.

Step 4

In a small bowl, prepare the glaze by mixing together 1/4 cup of ketchup, 2 tablespoons of brown sugar, and 1 teaspoon of Dijon mustard.

Step 5

Brush the glaze evenly over the tops of the meatloaf muffins with a spoon or pastry brush.

Step 6

Bake in the preheated oven for 20–25 minutes, or until the meatloaf muffins reach an internal temperature of 160°F (71°C).

Step 7

Once done, remove the muffins from the oven and let them rest in the pan for 5 minutes.

Step 8

Carefully remove the muffins from the tin and serve warm. Pair with mashed potatoes and steamed vegetables for a complete meal.
