Ingredients

  • 1 loaf Ciabatta bread
  • 0.5 cup Kalamata olives, pitted and chopped
  • 0.5 cup Green olives, pitted and chopped
  • 0.5 cup Roasted red peppers, diced
  • 0.5 cup Artichoke hearts, chopped
  • 2 tablespoons Capers, drained
  • 3 tablespoons Olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • 6 slices Provolone cheese, sliced
  • 6 slices Mozzarella cheese, sliced
  • 1 cup Fresh spinach leaves
  • 2 tablespoons Butter, softened (optional, for grilling)

Directions

Step 1

Slice the ciabatta loaf horizontally to create a top and bottom half.

Step 2

In a medium bowl, combine the chopped Kalamata and green olives, roasted red peppers, artichoke hearts, capers, olive oil, red wine vinegar, and dried oregano. Mix well to create the olive salad.

Step 3

Spread an even layer of the olive salad on the cut side of the bottom half of the ciabatta bread.

Step 4

Layer the Provolone and Mozzarella cheese slices evenly over the olive salad.

Step 5

Top the cheese layers with fresh spinach leaves, then place the top half of the ciabatta bread over the layers to form a sandwich.

Step 6

Cut the sandwich into four equal sections for easier handling.

Step 7

Preheat a panini press or a grill pan over medium heat. If using a grill pan, weigh the sandwich down with a heavy skillet or grill press.

Step 8

For extra crispness, spread a thin layer of softened butter on the outer sides of the bread before grilling (optional).

Step 9

Grill each sandwich portion for 3-5 minutes until the bread is golden and crisp, and the cheese is melted.

Step 10

Remove from heat, allow to cool slightly, and serve warm. Enjoy your Meatless Muffuletta Panini!
