  • 2 cups Cooked lentils
  • 1 cup Breadcrumbs
  • 0.5 cup Rolled oats
  • 1 medium Carrot, finely grated
  • 1 Celery stalk, finely diced
  • 1 small Onion, finely diced
  • 2 Garlic cloves, minced
  • 2 tablespoons Ground flaxseeds
  • 5 tablespoons Water
  • 2 tablespoons Soy sauce
  • 0.5 cup Ketchup
  • 1 teaspoon Dry thyme
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or line it with parchment paper.

Step 2

In a small bowl, mix the ground flaxseeds with 5 tablespoons of water to create a flax egg. Let it sit for 5-10 minutes until it thickens.

Step 3

Heat the olive oil in a skillet over medium heat. Add the diced onion, garlic, grated carrot, and diced celery. Sauté for 5-7 minutes until the vegetables are soft and fragrant. Set aside to cool slightly.
