Ingredients

  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 0.5 cup Bread crumbs
  • 0.5 cup Parmesan cheese, grated
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 3 cups Marinara sauce
  • 4 pieces Sub rolls
  • 1 cup Mozzarella cheese, shredded
  • 2 tbsp Fresh parsley, chopped (optional for garnish)

Directions

Step 1

In a large bowl, combine ground beef, ground pork, bread crumbs, Parmesan cheese, egg, minced garlic, dried oregano, dried basil, salt, and black pepper. Use your hands to gently mix until the ingredients are evenly incorporated.

Step 2

Shape the mixture into meatballs, about 1.5 inches in diameter. You should have approximately 12-16 meatballs.

Step 3

Heat the olive oil in a large skillet over medium heat. Once hot, add the meatballs in a single layer. Cook for 2-3 minutes on each side until browned all over. You may need to do this in batches to avoid overcrowding.

Step 4

Once all the meatballs are browned, return them to the skillet and pour in the marinara sauce. Bring the sauce to a simmer, reduce the heat to low, and cover. Cook for 20-25 minutes, stirring occasionally, until the meatballs are cooked through and the sauce is thickened.

Step 5

While the meatballs are cooking, preheat your oven to 375°F (190°C).

Step 6

Slice the sub rolls lengthwise, being careful not to cut all the way through. Place the rolls on a baking sheet and toast them in the oven for about 5 minutes until lightly crispy.

Step 7

Once the rolls are toasted, spoon 3-4 meatballs and some marinara sauce into each roll. Sprinkle shredded mozzarella cheese on top of the meatballs.

Step 8

Place the filled sandwiches back into the oven for 5-7 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the sandwiches from the oven and garnish with fresh parsley, if desired. Serve immediately with a side of chips or salad.
