Ingredients

  • 1 pound Ground beef
  • 0.25 cup Parmesan cheese
  • 0.5 cup Breadcrumbs
  • 1 large Egg
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 medium Carrots, diced
  • 2 Celery stalks, diced
  • 2 Garlic cloves, minced
  • 6 cups Chicken broth
  • 1 14-ounce can Canned crushed tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.75 cup Alphabet pasta
  • 0.25 cup Fresh parsley, chopped

Directions

Step 1

In a large bowl, combine the ground beef, Parmesan cheese, breadcrumbs, egg, garlic powder, 0.5 teaspoon of salt, and a pinch of black pepper. Mix until well combined.

Step 2

Roll the mixture into small, bite-sized meatballs (about 1 inch in diameter) and set them aside on a plate.

Step 3

In a large soup pot, heat the olive oil over medium heat. Add the meatballs in batches, cooking until browned on all sides (about 5 minutes per batch). Remove the meatballs and set aside.

Step 4

In the same pot, add the diced onion, carrots, celery, and minced garlic. Cook for 5 minutes until softened and fragrant.

Step 5

Pour in the chicken broth and crushed tomatoes. Stir in the oregano, basil, remaining salt, and black pepper to taste. Bring to a gentle boil.

Step 6

Reduce heat to a simmer and carefully add the browned meatballs back into the soup. Simmer for 10 minutes to allow flavors to meld.

Step 7

Add the alphabet pasta to the pot and continue simmering for another 6-8 minutes, or until the pasta is cooked al dente.

Step 8

Stir in the fresh parsley, taste, and adjust seasoning if needed.

Step 9

Serve hot with a sprinkle of Parmesan cheese on top if desired. Enjoy!
