Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Salt
  • 2 tablespoons Ghee or oil
  • 0.75 cup Water
  • 4 cups Vegetable oil
  • 1 pound Minced beef or lamb
  • 1 large Onion, finely chopped
  • 2 Garlic cloves, minced
  • 1 tablespoon Ginger, minced
  • 1 Green chili, finely chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Garam masala
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Peas (optional)
  • 2 tablespoons Cilantro, chopped

Directions

Step 1

In a large bowl, mix all-purpose flour with 1 teaspoon salt and 2 tablespoons ghee or oil until the mixture resembles fine crumbs.

Step 2

Gradually add 0.75 cup water to the flour mixture, kneading until a smooth and firm dough forms. Cover with a damp cloth and set aside for at least 20 minutes.

Step 3

In a large pan, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion, garlic, ginger, and green chili, and sauté until the onions are translucent.

Step 4

Add the minced meat to the pan and cook until browned, breaking it into small pieces with a spatula.

Stir in ground cumin, ground coriander, garam masala, turmeric powder, 1 teaspoon salt, and black pepper. Cook for another 5 minutes.

Divide the dough into 12 equal portions and roll each portion into a ball. Using a rolling pin, roll each ball into a flat, oval-shaped disc, about 6 inches in diameter.

Cut each disc in half to form two semi-circles. Take one semi-circle, fold it into a cone, and seal along the edge using a little water.

Fill each cone with the meat mixture, then seal the open edge well by pinching or pressing down with a fork.

In a deep frying pan, heat 4 cups of vegetable oil to 350°F (175°C).

Fry the samosas in batches until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to remove them from the oil and drain on paper towels.
