Ingredients

  • 3 cups All-purpose flour
  • 1.5 cups Unsalted butter (cold, cubed)
  • 0.5 cups Ice water
  • 1 teaspoon Salt
  • 1 pound Ground beef
  • 1 medium Onion (finely chopped)
  • 1 medium Carrot (finely diced)
  • 1 medium Potato (peeled and finely diced)
  • 2 cloves Garlic cloves (minced)
  • 0.5 cup Beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Thyme (fresh or dried)
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Pepper
  • 1 large Egg (beaten, for egg wash)
  • 2 tablespoons Olive oil
  • 2 tablespoons Water

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and use a pastry cutter or your hands to work the butter into the flour until the mixture resembles coarse crumbs.

Step 2

Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix.

Step 3

Divide the dough into two portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 4

In a large skillet over medium heat, heat the olive oil. Add the onion, carrot, and potato, and sauté until softened, about 5-7 minutes.

Step 5

Add the garlic and cook for another minute until aromatic.

Step 6

Add the ground beef to the skillet, breaking it up with a spoon, and cook until browned, about 5-6 minutes.

Step 7

Stir in the tomato paste, thyme, paprika, salt, and pepper. Cook for an additional 2 minutes to allow the flavors to combine.

Step 8

Add the beef broth and let the mixture simmer for 5 minutes, stirring occasionally, until the liquid has reduced and the filling is thickened. Remove the skillet from heat and let the filling cool slightly.

Step 9

Preheat your oven to 375°F (190°C).

Step 10

On a floured surface, roll out one portion of dough to about 1/8-inch thickness. Use a round cutter or bowl (around 5-6 inches in diameter) to cut out circles.

Step 11

Place about 2 tablespoons of the filling onto one half of each dough circle. Fold the other half over to form a semicircle and crimp the edges together with a fork to seal.

Step 12

Repeat with the remaining dough and filling, re-rolling scraps as needed.

Step 13

Place the assembled pies on a baking sheet lined with parchment paper.

Step 14

In a small bowl, whisk together the beaten egg and 2 tablespoons of water to make an egg wash. Brush the egg wash over the tops of the pies.

Step 15

Using a sharp knife, make a small slit or two on the top of each pie to allow steam to escape.

Step 16

Bake the pies in the preheated oven for 25-30 minutes, or until the crust is golden brown.

Step 17

Remove from the oven and let cool slightly before serving. Enjoy your homemade meat pies!
