Ingredients

  • 12 sheets phyllo dough
  • 500 grams ground beef
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 grams unsalted butter, melted
  • 1 egg, beaten (for sealing)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft and translucent, about 3-4 minutes.

Step 3

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4

Add the ground beef to the skillet and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 6-8 minutes.

Step 5

Stir in the cumin, paprika, salt, and black pepper. Cook for another 1-2 minutes to allow the flavors to combine.

Step 6

Remove the skillet from the heat and mix in the chopped parsley. Let the meat mixture cool for about 10 minutes.

Step 7

Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out. Take one sheet and place it on a clean work surface.

Step 8

Brush the phyllo sheet lightly with melted butter and place a second sheet on top. Brush this sheet with butter as well.

Step 9

Cut the stacked sheets into 3 equal strips lengthwise.

Step 10

Place about 2 tablespoons of the meat mixture near the bottom edge of each strip. Fold the edges over the filling, then roll tightly into a cigar-shaped roll.

Step 11

Brush the end of each roll with beaten egg to seal it. Repeat with the remaining phyllo sheets and filling.

Step 12

Arrange the rolls seam-side down on the prepared baking sheet. Brush the tops lightly with melted butter.

Step 13

Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.

Step 14

Let the meat phyllo rolls cool slightly before serving. Enjoy them warm as a snack or appetizer!
