Ingredients

  • 500 grams Beef chuck or stew meat
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 3 cloves Garlic cloves
  • 2 teaspoons Paprika
  • 2 tablespoons Tomato paste
  • 400 grams Diced tomatoes
  • 500 milliliters Beef broth
  • 2 leaves Bay leaves
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 250 grams Macaroni
  • 2 tablespoons Fresh parsley

Directions

Step 1

Cut the beef into bite-sized cubes and set aside.

Step 2

Finely dice the onion and mince the garlic.

Step 3

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 4

Add the beef cubes to the pot and sear until browned on all sides. Remove the beef and set it aside.

Step 5

In the same pot, sauté the onions until soft and translucent, about 5 minutes.

Step 6

Add the minced garlic and paprika to the pot, stirring until fragrant, about 1 minute.

Step 7

Stir in the tomato paste and cook for 2 minutes to deepen the flavor.

Step 8

Add the seared beef back to the pot, along with the diced tomatoes, beef broth, bay leaves, oregano, salt, and pepper. Stir to combine.

Step 9

Bring the mixture to a boil, then reduce the heat to low and let it simmer for 70–75 minutes, or until the meat is tender. Stir occasionally and add a splash of water if the liquid reduces too much.

Step 10

While the goulash simmers, cook the macaroni in a separate pot following the package instructions until al dente. Drain and set aside.

Step 11

Once the meat is tender, add the cooked macaroni to the goulash and mix until well combined.

Step 12

Taste and adjust seasoning with additional salt or pepper if needed.

Step 13

Serve hot, garnished with freshly chopped parsley.
