Ingredients

  • 3 cups Cooked shredded chicken
  • 2 cups Green salsa verde
  • 1 cup Sour cream

  • 0.25 teaspoon Black pepper
  • 8 Flour tortillas (8 inches)
  • 2 cups Shredded Monterey Jack cheese
  • 1 cup Shredded cheddar cheese
  • 1 tablespoon Olive oil
  • 0.25 cup Thinly sliced scallions (green onions)
  • 1 large Diced avocado
  • 1 whole lime (cut into wedges) Lime wedges, for serving

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil and set it aside.

Step 2

In a large mixing bowl, combine the shredded chicken, 1 cup of green salsa verde, 1/2 cup sour cream, chopped cilantro, diced green chilies, garlic powder, cumin powder, salt, and black pepper. Mix until well combined and set aside.

In a separate small bowl, combine the remaining 1 cup of green salsa verde with the remaining 1/2 cup of sour cream. Stir until smooth to create the enchilada sauce.
