Ingredients

  • 1 pound ground beef or ground turkey
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups frozen mixed vegetables (carrots, peas, corn, green beans)
  • 2 large russet potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 0.5 cup milk
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika (optional, for garnish)
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large pot, bring water to a boil and cook the cubed potatoes for 12-15 minutes, or until fork-tender. Drain and set aside.

Step 3

While potatoes are cooking, heat olive oil in a large skillet over medium heat. Add the ground beef or turkey, diced onion, and minced garlic. Cook until the meat is browned and the onion is translucent, about 5-7 minutes. Drain any excess grease.

Step 4

Stir in the frozen mixed vegetables, cream of mushroom soup, and milk. Mix until well combined. Season with salt and black pepper.

Step 5

Mash the cooked potatoes in a bowl with butter until smooth. Add a pinch of salt, if desired.

Step 6

Grease a 9x13-inch casserole dish with olive oil or cooking spray. Spread the meat and vegetable mixture evenly in the bottom of the dish.

Step 7

Spread the mashed potatoes over the meat and vegetable layer, smoothing it out with a spoon or spatula.

Step 8

Sprinkle shredded cheddar cheese evenly over the top of the mashed potatoes.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbling.

Step 10

For an optional touch, sprinkle paprika over the top before serving for added color and flavor.

Step 11

Let the casserole cool for 5 minutes before serving. Enjoy your Meal in One Casserole!
