Ingredients

  • 500 grams Prawns (cleaned and deveined)
  • 1 large Onion (finely chopped)
  • 4 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • 3 medium Tomatoes (diced)
  • 200 ml Coconut milk
  • 2 tablespoons Curry powder
  • 0.5 teaspoons Turmeric powder
  • 1 teaspoon Paprika
  • 0.5 teaspoons Ground cumin
  • 8 leaves Fresh curry leaves
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Fresh coriander leaves (chopped)
  • 1 whole Lime (for garnish)
  • 1 teaspoon Salt
  • 100 ml Water

Directions

Step 1

Start by preparing the prawns. Ensure they are cleaned and deveined properly. Rinse them and pat dry with a paper towel.

Step 2

Heat the vegetable oil in a large pan or skillet over medium heat. Add the chopped onions and sauté until golden and softened, about 5 minutes.

Step 3

Add the minced garlic, grated ginger, and curry leaves. Stir well and sauté for 1-2 minutes until fragrant.

Step 4

Mix in the curry powder, turmeric powder, paprika, and ground cumin. Stir the spices into the onion mixture, allowing them to bloom for 30 seconds to 1 minute.

Step 5

Add the diced tomatoes and cook for 5-7 minutes, stirring occasionally, until the tomatoes break down and form a thick paste.

Step 6

Pour in the coconut milk and water, stirring to combine. Season with salt and bring the mixture to a simmer.

Step 7

Reduce the heat to low and let the curry simmer for 5 minutes, allowing the flavors to meld together.

Step 8

Gently add the prawns to the curry and stir to coat. Cook for 5-7 minutes, or until the prawns turn pink and are fully cooked through.

Step 9

Taste the curry and adjust seasoning if needed. Remove from heat and sprinkle chopped coriander leaves over the top.

Step 10

Transfer the curry to a serving dish and garnish with lime wedges. Serve hot with steamed rice or flatbreads like naan or roti.
