Ingredients

  • 2 cups jasmine rice
  • 4 cups water
  • 1 cup coconut milk
  • 1 cup pineapple chunks
  • 1 cup cooked ham, diced
  • 1 large red bell pepper, diced
  • 3 stalks green onion, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • 2 cloves garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro (optional)

Directions

Step 1

Rinse the jasmine rice in cold water until the water runs clear. Drain well.

Step 2

In a medium pot, combine the rinsed rice, water, and coconut milk. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is fully cooked and the liquid is absorbed. Remove from heat and set aside.

Step 3

While the rice is cooking, heat the sesame oil in a large skillet or wok over medium heat.

Step 4

Add the diced red bell pepper, grated ginger, and minced garlic to the skillet. Sauté for 2-3 minutes until fragrant and the bell pepper begins to soften.

Step 5

Stir in the diced cooked ham and pineapple chunks. Cook for another 3-4 minutes until the ham is heated through and the pineapple starts to caramelize slightly.

Step 6

Add the cooked rice to the skillet and gently stir to combine all the ingredients.

Step 7

Pour the soy sauce over the rice mixture and sprinkle with salt and black pepper. Stir well to evenly distribute the seasoning.

Step 8

Remove from heat and garnish with chopped green onion and fresh cilantro, if using.

Step 9

Serve warm and enjoy your Maui Maui Rice as a flavorful standalone dish or as a side to grilled meats or seafood.
