  • 2 tbsp olive oil
  • 6 cups romaine lettuce
  • 1 cup cherry tomatoes
  • 1 cup black beans
  • 1 cup corn kernels (cooked)
  • 1 cup cheddar cheese (shredded)
  • 1 avocado
  • 0.25 cup fresh cilantro (chopped)
  • 1 cup tortilla strips
  • 1 lime
  • 2 tbsp chipotle sauce
  • 0.25 cup sour cream
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup water

Directions

Step 1

Heat 1 tablespoon of olive oil in a skillet over medium-high heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Step 3

Sprinkle the taco seasoning over the beef, add 1/4 cup of water, and stir well. Simmer for 2-3 minutes until the liquid has evaporated. Remove from heat and let cool slightly.

Step 4

While the beef is cooking, chop the romaine lettuce into bite-sized pieces and halve the cherry tomatoes.

Step 5

In a large salad bowl, combine the romaine lettuce, cherry tomatoes, black beans, corn, and shredded cheddar cheese.

Step 6

Slice the avocado into thin slices or cubes and set aside for topping.

Step 7

In a small bowl, whisk together the sour cream, chipotle sauce, the juice of 1 lime, and a pinch of salt and pepper to make the dressing.

Step 8

Toss the salad with the dressing until evenly coated.

Step 9

Top the salad with the cooked ground beef, sliced avocado, fresh cilantro, and crispy tortilla strips.

Step 10

Serve immediately and enjoy this bold, zesty Matador Taco Salad!
