Ingredients

  • 1 pound Ground beef
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 1 packet Taco seasoning
  • 1 14-ounce can Diced tomatoes with green chilies
  • 1 15-ounce can Black beans, drained and rinsed
  • 1 cup Frozen corn, thawed
  • 6 large Flour tortillas
  • 1 cup Salsa
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 0.25 cup Fresh cilantro, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set it aside.

Step 2

Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until soft, about 3-4 minutes.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it up with a wooden spoon as it cooks. Drain any excess fat.

Step 5

Stir in the taco seasoning, diced tomatoes with green chilies, black beans, and corn. Simmer the mixture for 5 minutes to allow the flavors to meld.

Step 6

Spread a thin layer of salsa on the bottom of the prepared baking dish.

Step 7

Place two tortillas in a single layer to cover the bottom of the dish. Trim them as needed to fit.

Step 8

Spread one-third of the beef mixture evenly over the tortillas, followed by a sprinkle of shredded cheddar and Monterey Jack cheese.

Step 9

Repeat the layers two more times: tortillas, beef mixture, and cheese.

Step 10

Top the final layer with any remaining cheese and cover loosely with aluminum foil.

Step 11

Bake the lasagna for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 12

Remove from the oven and let the lasagna cool for 5 minutes. Sprinkle chopped cilantro over the top, if desired.

Step 13

Slice into portions and serve warm. Pair with sour cream, guacamole, or additional salsa on the side for extra flavor.
