Ingredients

  • 4 medium-sized sweet potatoes
  • 4 tablespoons unsalted butter
  • 1 cup brown sugar
  • 0.25 cup granulated sugar
  • 0.5 cup evaporated milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 1 9-inch prepared pie crust

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and cube the sweet potatoes into large chunks. Place them in a large pot of boiling water and cook for 15-20 minutes until fork-tender.

Step 3

Drain the sweet potatoes and transfer them to a large mixing bowl. Mash them until smooth using a potato masher or a hand mixer.

Step 4

Stir in the unsalted butter while the sweet potatoes are still hot, allowing it to melt completely.

Step 5

Add brown sugar, granulated sugar, evaporated milk, eggs, vanilla extract, ground cinnamon, ground nutmeg, and salt to the mashed sweet potatoes. Mix thoroughly until the mixture is smooth and well-combined.

Step 6

Pour the sweet potato filling into the prepared 9-inch pie crust, spreading it evenly.

Step 7

Place the pie on the center rack of the preheated oven and bake for 50-60 minutes, or until the filling is set and a toothpick inserted into the center comes out clean.

Step 8

Remove the pie from the oven and let it cool to room temperature before slicing and serving. Optionally, serve with whipped cream or a sprinkle of cinnamon for garnish.
