Ingredients

  • 4 large Russet potatoes
  • 3 tablespoons Butter
  • 1 medium (diced) Yellow onion
  • 2 cloves (minced) Garlic
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoons (or to taste) Black pepper
  • 0.5 cup Sour cream
  • 1 cup (shredded) Cheddar cheese
  • 3 stalks (sliced) Green onions
  • 4 slices (crumbled) Cooked bacon

Directions

Step 1

Peel the potatoes and cut them into small chunks for even cooking.

In a large pot, add the potato chunks and cover them with water. Bring to a boil over medium-high heat and cook until tender, about 12-15 minutes. Drain and set aside.
