Ingredients

  • 1 cup Mashed potatoes
  • 1 cup Whole milk
  • 1 packet Active dry yeast
  • 1 cup Granulated sugar
  • 1 stick Unsalted butter
  • 2 Eggs
  • 4 cups All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Nutmeg (optional)
  • 6 cups Vegetable oil (for frying)
  • 1 cup Powdered sugar or glaze of choice (for topping)

Directions

Step 1

In a small saucepan, warm the milk until it is lukewarm (about 110°F). Sprinkle the yeast over the warm milk and let it sit for 5 minutes, or until it turns frothy.

Step 2

In a large mixing bowl, combine the mashed potatoes, granulated sugar, unsalted butter, and eggs. Beat together until well combined.

Step 3

Add the frothy yeast-milk mixture to the bowl. Stir until everything is incorporated.

Step 4

In a separate bowl, whisk together the flour, salt, and nutmeg (if using). Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. The dough should be slightly sticky but manageable.

Step 5

Turn the dough out onto a floured surface and knead gently for 3-5 minutes, or until smooth. Shape it into a ball, place it in a greased bowl, cover, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Step 6

Once the dough has risen, roll it out to about 1/2-inch thickness on a floured surface. Use a round cookie cutter (or the rim of a glass) to cut out doughnut shapes, and use a smaller cutter to remove the centers.

Step 7

Heat vegetable oil in a deep pot or fryer to 350°F. Fry the doughnuts a few at a time, for about 1-2 minutes per side, or until golden brown. Remove and drain on paper towels.

Step 8

Optionally, fry the doughnut holes for a fun snack!

Step 9

Once the doughnuts have cooled slightly, dust them with powdered sugar or drizzle with your favorite glaze.

Step 10

Serve fresh and enjoy the fluffy, delicious treat!
