Ingredients

  • 3 whole Fresh peaches
  • 200 grams Mascarpone cheese
  • 3 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 2 sheets Frozen puff pastry sheets
  • 1 whole Egg
  • 1 tablespoon Milk
  • 2 tablespoons Powdered sugar

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Thaw the frozen puff pastry sheets according to the package instructions and set them aside.

Step 3

Wash the peaches, then halve them and remove the pits. Dice the peaches into small cubes and set aside.

Step 4

In a medium bowl, mix the mascarpone cheese, 2 tablespoons of granulated sugar, vanilla extract, and ground cinnamon until smooth and well combined.

Step 5

Roll out the puff pastry sheets on a lightly floured surface to slightly flatten them. Cut each sheet into 6 equal squares (you should have 12 squares).

Step 6

Place about 1 tablespoon of the mascarpone mixture in the center of each puff pastry square. Top the cheese mixture with a few diced peaches.

Step 7

Fold each pastry square into a triangle by bringing one corner over the filling to meet the opposite corner. Seal the edges by pressing them together with the tines of a fork.

Step 8

In a small bowl, whisk together the egg and milk to create an egg wash. Brush the top of each pastry with the egg wash.

Step 9

Sprinkle the remaining 1 tablespoon of granulated sugar evenly over the tops of the pastries.

Step 10

Transfer the pastries to the prepared baking sheet and bake in the preheated oven for 18-20 minutes, or until the pastries are puffed and golden brown.

Step 11

Remove the pastries from the oven and let them cool slightly on a wire rack.

Step 12

Dust the pastries with powdered sugar before serving warm or at room temperature.
