  • 2 cups, chopped Spinach
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon (adjust to taste) Salt
  • 2 tablespoons, chopped Fresh cilantro
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the green lentils thoroughly under cold water, then soak them in water for 15 minutes while preparing other ingredients.

Heat the vegetable oil in a large pot over medium heat. Once hot, add the cumin seeds and let them sizzle for about 30 seconds until aromatic.

Add the chopped onions, garlic, and ginger to the pot. Sauté for 5-7 minutes, stirring frequently, until the onions are soft and golden brown.

Stir in the turmeric powder, ground coriander, and red chili powder. Cook for an additional 1-2 minutes to toast the spices.
