Ingredients

  • 4 medium Potatoes
  • 1.5 liters Vegetable oil
  • 1 teaspoon Salt
  • 1 teaspoon Red chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Chaat masala
  • 2 tablespoons Fresh cilantro
  • 1 medium Lime

Directions

Step 1

Peel and cut the potatoes into thick sticks, about 1/3-inch thick.

Step 2

Place the cut potatoes in a large bowl of cold water and soak for 15 minutes to remove excess starch.

Step 3

Drain the potatoes and pat them dry thoroughly using a clean kitchen towel.

Step 4

Heat the vegetable oil in a deep fryer or large, heavy-bottomed pot to 350°F (175°C).

Step 5

Fry the potatoes in batches, for about 3-4 minutes until they are a light golden color, then remove them and drain on paper towels. This is the first fry.

Step 6

Increase the oil temperature to 375°F (190°C) for the second fry.

Step 7

Refry the potatoes in batches until they are crispy and golden brown, about 3-4 minutes, then remove and drain again on paper towels.

Step 8

While the fries are still hot, toss them with salt, red chili powder, cumin, coriander, garam masala, turmeric, and chaat masala in a large bowl until evenly coated.

Step 9

Chop the cilantro finely and sprinkle over the seasoned fries.

Step 10

Squeeze lime juice over the fries and toss them gently.
