Ingredients

  • 4 large potatoes
  • 2 cups vegetable oil
  • 1 medium, finely chopped onion
  • 1 medium, finely chopped tomato
  • 3 finely minced garlic cloves
  • 1 teaspoon, minced ginger
  • 2 slit green chilis
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 0.5 teaspoon garam masala
  • 1 teaspoon salt
  • 2 tablespoons lemon juice
  • 0.25 cup, chopped fresh cilantro

Directions

Step 1

Peel the potatoes and cut them into thin strips, like French fries. Rinse them in cold water to remove excess starch and pat dry with a clean kitchen towel.

Step 2

Heat the vegetable oil in a deep frying pan or wok over medium heat.

Step 3

In batches, deep fry the potato strips until golden brown and crispy. This should take about 4-5 minutes per batch. Remove them from the oil and drain on a paper towel-lined plate.

Step 4

In a separate pan, heat two tablespoons of the remaining oil over medium heat.

Step 5

Add the cumin seeds and allow them to sizzle for about 30 seconds.

Step 6

Add the finely chopped onion and sauté until they become translucent.

Step 7

Mix in the minced garlic and ginger, sautéing for another 1-2 minutes until fragrant.

Step 8

Add the finely chopped tomato and green chilis to the pan, cooking until the tomatoes soften and blend with the other ingredients.

Step 9

Stir in the coriander powder, turmeric powder, red chili powder, garam masala, and salt.

Step 10

Cook for another 2-3 minutes until the spices are well combined and aromatic.

Step 11

Add the fried potato chips to the pan, tossing them gently to coat them with the masala mixture.

Step 12

Remove the pan from heat and drizzle the lemon juice over the masala chips for added zest.

Step 13

Garnish with fresh cilantro before serving.

Step 14

Serve hot, either as a side dish or a snack.
