Ingredients

  • 3 whole Red bell peppers
  • 3 whole Yellow bell peppers
  • 0.33 cup Extra-virgin olive oil
  • 2 whole Garlic cloves
  • 1 tablespoon Red wine vinegar
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 450°F (230°C).

Step 2

Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 3

Rinse the bell peppers under cold water, then pat them dry. Place them whole on the prepared baking sheet.

Step 4

Roast the peppers in the oven for 20-25 minutes, turning them halfway through, until the skins are blistered and charred in spots.

Step 5

Remove the peppers from the oven and carefully transfer them to a bowl. Cover the bowl tightly with plastic wrap or a plate to trap the steam. Let them rest for 10-15 minutes. This will make peeling the skins easier.

Step 6

Once the peppers are cool enough to handle, peel off the charred skins. Remove the stems, seeds, and membranes, then cut the peppers into thick strips.

Step 7

In a small mixing bowl, whisk together the olive oil, minced garlic cloves, red wine vinegar, salt, and black pepper.

Step 8

Chop the fresh parsley and set it aside.

Step 9

Place the roasted pepper strips in a shallow dish. Pour the olive oil mixture over the peppers and gently toss to coat.

Step 10

Sprinkle the chopped parsley over the peppers, cover the dish, and let it marinate in the refrigerator for at least 1 hour. For best flavor, marinate overnight.

Step 11

Serve the marinated roasted peppers cold or at room temperature as a side dish, appetizer, or sandwich topping. Enjoy!
