Ingredients

  • 500 grams fresh okra
  • 4 tablespoons olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 0.25 teaspoon red chili flakes
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Wash the fresh okra thoroughly under cool running water and pat dry with a kitchen towel. Trim the stems slightly, making sure not to cut into the pods.

Step 2

In a large bowl, combine olive oil, apple cider vinegar, lemon juice, minced garlic, honey, Dijon mustard, salt, black pepper, and red chili flakes. Whisk well to create a smooth and emulsified marinade.

Step 3

Add the trimmed okra to the marinade and toss until all of the pods are evenly coated. Be gentle to avoid breaking the pods.

Step 4

Cover the bowl with plastic wrap or transfer the okra and marinade to an airtight container. Place it in the fridge and allow it to marinate for at least 2 hours, preferably overnight for maximum flavor.

Step 5

Before serving, sprinkle the marinated okra with fresh chopped parsley for a pop of color and added freshness.

Step 6

Serve chilled or at room temperature as a zesty side dish or appetizer.
