Ingredients

  • 500 g Broccoli florets
  • 60 ml Olive oil
  • 30 ml Lemon juice
  • 2 Garlic cloves, minced
  • 15 ml Red wine vinegar
  • 5 ml Honey
  • 5 ml Dijon mustard
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Red chili flakes (optional)
  • 15 g Fresh parsley, chopped

Directions

Step 1

Wash the broccoli florets thoroughly and cut them into bite-sized pieces.

Step 2

Bring a large pot of water to a boil and prepare a large bowl of ice water for blanching.

Step 3

Add the broccoli to the boiling water and cook for 2-3 minutes until the florets turn bright green and are just tender.

Step 4

Immediately transfer the broccoli to the bowl of ice water to stop the cooking process. Let it sit for 2 minutes, then drain thoroughly and pat dry with a clean kitchen towel.

In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, garlic, honey, Dijon mustard, salt, black pepper, and red chili flakes (if using) to make the marinade.
