  • 4 whole fresh artichokes
  • 1 whole lemon
  • 1 gallon water
  • 1 cup white wine vinegar
  • 0.5 cup extra virgin olive oil

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Fill a large bowl with 1 gallon of water and juice from the lemon. Drop the spent lemon halves in the water.

Trim the artichokes by cutting off the top inch and removing the outer tough leaves. Trim the base and peel the stem.
