Ingredients

  • 6 Large eggs
  • 4 cups Water
  • 3 tablespoons Soy sauce
  • 2 Black tea bags
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground star anise
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon White vinegar
  • 0.25 teaspoon Salt
  • 1 teaspoon Paprika (for garnish)
  • 1 tablespoon Chives (optional, for garnish)

Directions

Step 1

Place the eggs in a medium-sized pot and cover them with water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low and let the eggs simmer for 10 minutes.

Step 2

Remove the eggs from the heat and place them in a bowl of ice water to cool for 5 minutes. Gently crack the shells of the eggs all over without peeling them to create small cracks across the surface.

In a medium pot, combine 4 cups of water, soy sauce, black tea bags, cinnamon, and star anise. Bring the mixture to a boil, then reduce to a simmer.
