  • 4 pieces Bone-in pork chops
  • 2 tablespoons Cajun seasoning

  • 2 tablespoons Unsalted butter
  • 1 large, diced Yellow onion
  • 1 large, diced Red bell pepper
  • 2 stalks, diced Celery
  • 3 minced Garlic cloves
  • 3 cups Fresh corn kernels
  • 0.5 cups Heavy cream
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried thyme
  • 0.25 cups Chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 sliced for garnish Green onions

Directions

Step 1

Season both sides of the pork chops generously with the Cajun seasoning. Set aside to marinate for 10 minutes while you prep the other ingredients.

Step 2

Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once the oil is hot, sear the pork chops on both sides for 3-4 minutes per side, or until golden brown. Remove the pork chops from the skillet and set aside on a plate.

Reduce the heat to medium and add the remaining 1 tablespoon of olive oil and the butter to the skillet. Once melted, add the diced onion, red bell pepper, and celery. Sauté for 5 minutes until softened and fragrant.
