Ingredients

  • 2 cups granulated sugar
  • 1 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1 cup maple syrup
  • 0.25 teaspoons salt
  • 1 teaspoon vanilla extract
  • 0.75 cup walnuts, chopped

Directions

Step 1

Prepare an 8x8 inch baking pan by greasing it lightly or lining it with parchment paper.

Step 2

In a medium-sized, heavy-bottomed saucepan, combine the granulated sugar, heavy cream, butter, maple syrup, and salt.

Step 3

Place the saucepan over medium heat and stir constantly until the sugar is completely dissolved.

Step 4

Attach a candy thermometer to the side of the saucepan, making sure the tip is fully submerged but not touching the bottom of the pan.

Step 5

Allow the mixture to come to a boil without stirring. Cook until it reaches the soft-ball stage, or 238°F (114°C). This will take about 10–15 minutes.

Step 6

Remove the saucepan from heat and let it cool for 5 minutes.

Step 7

Add the vanilla extract to the mixture. Using a wooden spoon, beat the fudge mixture vigorously until it thickens and becomes creamy. This will take about 5 minutes.

Step 8

Fold in the chopped walnuts and mix until evenly distributed.

Step 9

Pour the fudge into the prepared pan, smoothing the surface with a spatula if needed.

Step 10

Let the fudge cool completely at room temperature, about 2–3 hours, or chill in the refrigerator until set.

Step 11

Cut the fudge into 16 squares and serve. Store any leftovers in an airtight container at room temperature or refrigerated for up to 1 week.
